Crispy Oven Baked Potato Ham & Cheese Puffs With Thai Slaw

Ingredients (Serves 4)
- 120gm Cosmo’s potato mash
- 600ml boiling water
- 300gm Edam cheese
- 100gm sliced ham
- 100gm breadcrumbs
Thai Slaw
- 1/2 Cabbage
- 2 Carrots
- 1/2 Onion
- 1 Capsicum
- Some Parsley
- 2 tablespoons lime juice
- 1/2 cup Thai style salad dressing
Method
- Mix Cosmo’s potato mash with boiling water. Stir or whisk until mash is well mixed.
- Cut the cheese into 1x1x5cm rectangular block and wrap up with ham and then potato mash into a cylinder shape. Roll in breadcrumbs.
- Fan bake at 200°C for 40mins.
- Thai Slaw - shred the cabbage, carrot, onion, capsicum and parsley and mix in the bowl. Drizzle the slaw with lime and salad dressing.
